Spring Quinoa Salad

Very crunchy ,tasty, fresh salad.
Ingredients
- 1/2 cup quinoa
- 1 leek,cut in pieces
- 1/2 cup peas
- basil
- 1/4 cup sliced radishes
- alfafa sprouts
- salt pepper
- lemon
- olive oil

Cook quinoa in a pot of boiling water for 10 to 13 min. In a skillet sauté leeks with 1 ts olive oil until tender;add peas and cook, for another 5 min.Drain quinoa.Mix ingredients in salad bowl.It's important not to cook basil,you just add it at the last minute.Same for alfafa sprouts.Season to your taste with lemon juice,olive oil,salt,pepper.Enjoy!

This milkshake is inspired by Valerie Cupillard's"Petits déjeuners bio"recipe book.You mix one glass of cold rice milk,2 TS of alfafa and I added 1 passion fruit.I prefer the simple green version but wanted to give it an exotic touch.Why not try it with cucumber next time...

Sprouts contain both vitamins, minerals, proteins and fibre, as an example Alfafa sprouts contain iron, magnesium, all 8 of the essential amino-acids, chlorophyll, vitamin A, vitamin B2, vitamin C, vitamin D, fibre and more….And it's really easy to grow your own sprouts.I'm so excited...It takes regularity to grow your own sprouts as you need to water them 2 to 5 times a day depending on the outside temperature during 6 to 9 days.They taste really good,really crunchy. and make a fabulous decoration for sandwiches,soups,salads...

Rice Flour Lemon Tea Cake

I really had to experience the rice flour I recently purchased at "les Nouveaux Robinson",an organic supermarket located in Montreuil where I love to shop,and I was obsessed with a mesmerizing recipe I had seen several months back on the Wednesdaychef's blog.I brought it to an "apero dinatoire" I was invited to.My friends found this cake delicious and moist!A definite keeper!

Ingredients

3/4 cup rice flour
1/4 cup patato fecule
1/2 teaspoon baking powder
1/8 teaspoon salt
3 large eggs separated
3/4 cup almond paste, at room temperature
1/2 cup cane sugar
1 teaspoon grated lemon zest
1 drop of orange essential oil
3 tablespoons lemon juice
1/4 cup olive oil

- Position a rack in the lower third of the oven and heat the oven to 350 degrees.

- Sift together the flour, baking powder and salt twice. In a small bowl, combine the eggs and vanilla and whisk together just to combine.

- In the bowl of a stand mixer fitted , beat the almond paste on low speed,add olive oil. This can take up to a minute, depending on how soft and warm it is. Slowly add the sugar , beating until incorporated.

- With the mixer still on medium speed, add the eggs in a very slow, steady stream and mix until incorporated. Stop the mixer and again scrape down the sides of the bowl. Turn on the mixer again to medium speed and mix for 30 seconds more.

- In another bowl beat egg whites until firm.

- Add the citrus zests,lemon juice and orange essential oil . Mix in with a wooden spoon. Add the flour mixture in two batches, stirring after each addition until incorporated.Fold in gently the egg whites. Scrape down the sides of the bowl one last time, then spoon the batter into the prepared pan and smooth the surface with an offset spatula.

- Bake until the top springs back when lightly touched and a cake tester inserted in the center comes out clean, 60 to 65 minutes.

Lunchbox Special:Chicken Breast with Yams

Another very simple ,quick,and nutritious lunch...
Ingredients
-chicken breast
-1 ts olive oil
-yams
-1 drop orange essential oil
-"mille et une nuit" curry blend from Goumanyat
-ginger
-cilantro
-black sesame seeds
Steam yams cut in pieces with skins until tender,about 10 min.Then easily peal off the skins.Mash yams,sprinkle with ginger,a little olive oil and the ,drop of orange essential oil.
Meanwhile heat pan with curry and olive oil. Broil chicken breast on medium heat!
Add cilantro,salt and sesame seeds when ready to serve.

Despite the fact I've neglected my blog these past few weeks due to my hectic life,I've continued taking pictures...So for a few days I'll focus on lunchboxes.In my pantry I still have some organic green tea soba noodles purshased ar Trader Joe's during my stay in California..This composes a nutritious,spring color, quick lunch ready in 10 min.You could also try this sister recipe created by Clotilde.
Ingredients
-Japanese style green tea noodles cooked in 4 minutes.
- raw zucchini,grated
-tofu,diced and fried.I find it tastier but you don't have to cook it if you're in a hurry.
-cilantro
-soy sauce
-sesame oil
-sprouts.I used PRIMEAL'S SOLEIL LEVANT mix.
-sesame seeds
